Dextarius is a Titan (reprinting the cards), which solves some of these questions and makes others a bit crunchier.
The final ruling is that both the mount and rider benefit from each other's movement special rules (i.e. if Dextarius were not a Titan, he would gain Echelon when Ywain was mounted. Mounting Hroka does not cause Caho-Ta to lose the benefits of Agile, etc), and use the mount's MOV stat.
This will be added in an update to the .PDF rules version next week.
The Mount benefits from the Rider's discretion, and the Rider benefits from the Mount's bulk and/or agility.
